Mutton Yakhni Pulao
Yakhni pulao is an easy delicious flavorful mutton rice recipe. Try it and enjoy your delicious meal.
Ingredients:
- Mutton-500 gm
- Long grain basmati rice-500 gm
- Ginger chopped-1 tbsp
- Garlic chopped-1 tbsp
- Whole spices-cinnamon, cardamom, clove, fennel seeds, cumin seeds, bay leaf, pepper cones and coriander seeds.
- Ghee-2 tbsp
- Onion-1 large
- Ginger garlic paste-1 tbsp
- Almonds-1/4 cup
- Fried onions-to garnish
- Mint leaves-to garnish
Preparation:
- Soak almonds in hot water for 15 minutes.
- After that peel off it's skin and add in to a blender.
- Puree it by adding enough water. Keep it aside.
- Add chopped ginger, garlic and whole spices in to a cotton cloth and tie it like a potli.
- In a pressure cooker add mutton pieces, potli, enough salt and water to cook.
- Cook until mutton cooked.
- Open it and remove the potli. Squeeze it well to extract the maximum flavor.
- Now separate the mutton pieces and stock water. Keep aside.
- Wash and soak basmati rice in water for 20 minutes.
- Drain it well.
- In a wide pan; heat ghee.
- Add few whole spices followed by onion sliced.
- Suate well to golden in color.
- Add ginger garlic paste and saute until raw smell goes off.
- Add almond paste and cooked mutton pieces; mix well.
- Add drained basmati rice.
- Add hot water (including the mutton stock) double the quantity of rice.
- Add enough salt and mix well.
- Cover the lid and cook until all the water get's absorbed and rice cooked perfectly.
- Serve by garnishing on top with fried onions and mint leaves.
