Coconut Upma

  1. Rava / semolina-1 1/2 cups
  2. Coconut oil-1 1/2 tbsp
  3. Mustard seeds-1/2 tsp
  4. Curry leaves-2 springs
  5. Dry red chilly-2
  6. Green chilly split-2
  7. Chopped cashew-1 tbsp
  8. Chopped ginger-1 tsp
  9. Chopped onion-1 medium
  10. Coconut milk-2 cups (Or little more)
  11. Salt-to taste
  12. Freshly grated coconut-2 tbsp
  • Dry roast rava (sooji) for about 5 minutes without changing it's color.
  • Keep it aside in a pan;
  • Heat coconut oil in a pan; crackle mustard seeds.
  • Add curry leaves followed by dry red chilly, green chilly, cashew, ginger and onion.
  • Saute for two minutes until onion gets transparent.
  • add coconut milk and salt; allow to boil.
  • When it boils add grated coconut and roasted semolina.
  • Quickly mix on low flame by cracking the lumps.
  • Cover the lid and cook for another two minutes on low flame.
  • Turn off heat; give a nice stir and serve hot.
