Carrot Chutney

  1. Carrot chopped in to small-1cup
  2. Coconut oil-1 tbsp
  3. Dry red chilly-5 to 7
  4. Small onion-one hand full
  5. Garlic-1 tsp
  6. Salt-to taste
  7. Tamarind-a small piece
Ingredients for seasoning:
  1. Coconut oil-1 tbsp
  2. Mustard seeds -1/2 tsp
  3. Urad dal-1/4 tsp
  4. Curry leaves-1 string
  • Heat a pan with oil; add dry red chilly and saute a minute.
  • Add small onion and garlic; saute a minute.
  • Add chopped carrots and cook for another 5 minutes until the raw taste of carrots gone.
  • Adda salt and tamarind piece.
  • Allow to cool the mixture and then transfer into a blender.
  • Blend smooth by adding 3 to 4 tbsps of water.
  • Add in to a serving bowl and season on top.
  • Heat oil in a pan, splutter mustard seeds followed by urad dal and curry leaves.
  • Pour it over the chutney and serve.
