Instant Mango Pickle
The typical Indian meal consists a pickle must in side. It's  mango season; Raw mangoes are plenty in everywhere. Instant pickles are excellent in taste and time saving. Try this simple finger licking pickle at home easily and relish your spice_tooth!

Instant Mango Pickle

Ingredients:
  1. Mango chopped-3 cups
  2. Salt-1 1/2 tbsp
  3. Chilly powder- 1/4 cup
  4. Fenugreek powder (uluva / methi seeds)- 1 tsp
  5. Hing powder (kayam / asafoetida)-1 tsp
  6. Vinegar- 1/2 cup
  7. Gingelly oil (or mustard oil)- 1/4 cup
Preparation:
  • Wash the mangoes and wipe them well with a kitchen towel.
  • Chop them in to small pieces and add in to a dry bowl.
  • Add salt, chilly powder, hing, fenugreek powder, vinegar and gingelly oil.
  • Mix well with a dry spoon. 
  • Pour them in to a dry air-tight container and start using after 7 days for best results.
  • Note: When you are making the pickle; take care all the utensils must be clean and dry.
