Mushroom Coconut milk Soup
 Mushroom coconut milk soup is one of the perfect vegan treat for welcoming winter. This is ridiculously easy and tastes great. Try this healthy and hearty treat for your dinner tonight.

Mushroom Coconut milk Soup
Ingredients:
  1. Olive oil-1 1/2 tbsp
  2. Thinly chopped garlic-1 tbsp
  3. Thinly chopped ginger-1 tbsp
  4. Thinly chopped onion-2 tbsp
  5. Thinly chopped carrot- 1/2 cup
  6. Chopped mushrooms-1 cup
  7. Pepper powder-1 tsp
  8. Salt-to taste
  9. Mixed herbs-1 tsp
  10. Coconut milk-2 1/2  cup
  11. joy.Fresh cream-2 tbsp
  12. Coriander leaves chopped-2 tbsp
Preparation:
  • Heat oil in a pan; add garlic, ginger and onion.
  • Saute for 2-3 minutes.
  • Add chopped carrots and mushrooms.
  • Add pepper powder, salt and mixed herbs. 
  • mix well and saute for 5 minutes until mushrooms get cooked and leaves moisture in it.
  • After that add coconut milk and boil for about 5 minutes until slightly thickens.
  • Add fresh cream and coriander leaves; mix well and turn off flame.
  • Serve warm and enjoy!!!
