Fruit Cake on Pressure Cooker

Making cakes on stove top is easier and any types of cake can made by this method. Here is the easy recipe of making rich fruit cake (plum cake) on pressure cooker. You can double the quantity for making a large cake (of 1kg).

Fruit Cake on Pressure Cooker

Ingredients For Making Caramel Syrup:
  1. Sugar- 1/4 cup
  2. Hot water-3 tbsp
Other Ingredients:
  1. Flour-3/4 cup
  2. Eggs-3 large
  3. Butter softened- 1/2 cup
  4. Powdered sugar-1/2 cup
  5. Chopped nuts- 1/4 cup (almond, cashew, walnut and pistachio)
  6. Chopped dry fruits-1/4 cup (dates, cherry and tutti frutti)
  7. Fresh orange juice-2 tbsp
  8. Vanilla essence-1 tsp
  9. Lemon zest- 1/2 tsp
  10. Salt-a pinch
  11. Baking powder- 1/2 tsp
  12. Baking soda- 1/4 tsp
  13. Spice powder- 1/2 tsp (cinnamon, clove and nut meg)
Preparation:
  • First prepare the caramel by heating 1/4 cup of sugar in a saucepan.
  • Do not stir the sugar but swirl the pan.
  • Cook on low heat until it turn dark golden brown in color.
  • Carefully pour the hot water and quickly turn off heat. (keep distance when pouring; it may splashes)
  • Allow to cools down and keep aside.
  • Heat a pressure cooker with 2 cups of salt or sand in it.
  • Place a stand on top and make the flame to low.
  • Cover the lid by removing its whistle and gasket.
  • Heat it until the batter gets ready.
  • Grease the baking tray with butter and dust flour.
  • Mix chopped nuts and fruits in a bowl, add 1/4 tsp of flour in to t and mix well. keep aside.
  • Crack 3 eggs in a bowl; separate the egg whites and egg yolks.
  • Beat egg white until triples the volume and fluffy; keep it aside.
  • In another bowl; beat egg yolk with softened butter until creamed well.
  • Add vanilla essence, orange juice, lemon zest and  powdered sugar; beat again until mixed well.
  • Now sift the dry ingredients in to it (flour, baking powder, baking powder, baking soda, salt and spice powder); beat again until mixed well.
  • Now add the egg white in to it by folding in three additions (fold until just mixed well).
  • Add 1/3 part of nuts and fruit; fold it to combine.
  • Pour this batter in to the greased baking tray and tap gently to remove air-bubbles.
  • Sprinkle the remaining nuts and fruits on top to garnish.
  • Place it inside the pre-heated pressure cooker and cover the lid.
  • Cook on low flame for about 45-50 minutes until the top gets dried well (check by inserting a tooth pick and whether comes out clean or not)
  • Allow to cools down completely.
  • Garnish on top with powdered sugar; cut in to slices and enjoy!!!
Note:
  • Measure all the ingredients correctly and keep it near by; just before pre-heating the pressure cooker.
  • Quickly after folding with the egg whites, fruits and nuts; bake it soon. The time lag may lead the cake to become hard and not fluffy.
  • You can soak the dry fruits and nut in fresh orange juice for two days before making this cake; to make it more rich and yum.

  1. I was loving my instant pot, bragging to all about it. Making my dogs food was so easy! I put in the food and the water, pressed pressure cook and like magic it was just done when it beeped.
