Savory Diamond Cuts

Snacks with long shelf life are always preferable to make for every busy Mum's. Here is one recipe among them. Spicy diamond cuts are one of the easy and popular Indian tea time snack. I think,savory version is the favorite for most of all and mine also...You  can adjust the spice level according to your spice tolerance Anyway moderate level stands the best. Here is the recipe of making spicy diamond cuts with little efforts.
  1. Flour-2 cup
  2. Dry red chilly-4 or 5
  3. Garlic-8 small
  4. Ginger-2 one inch pieces
  5. Salt-to taste
  6. Black sesame seeds- 1/2 tsp
  7. Cumin seeds or ajwain- 1/4 tsp
  8. Ghee-2 tsp
  9. Oil-for deep frying
  • In a blender add red chilly, garlic and ginger. Add little warm water and blend it until smooth.
  • In a large bowl, add flour, blended paste, cumin seeds, sesame seeds, melted ghee and salt; Crumble it well.
  • Add enough water and make a smooth dough.
  • Cover the dough and let it rest for 20 minutes.
  • After that divide the dough in to 3 or 4 balls.
  • Roll each ball in to a thin sheet on a rolling pin by dusting flour.
  • Now cut the rolled sheets in to small diamond shapes by using a sharp knife.
  • Heat a pan with oil and fry the diamond cuts on medium flame until nice golden and crisp.
  • Add in to colander to avoid the excess oil.
  • After cools down; store them in an air-tight container for long use.
