Spicy Lemon Pickle
Indian pickles are spicy and finger licking delicious. I feel my meal is incomplete without a teaspoon of pickle in side. As an ardent pickle lover; here i'm sharing the recipe of mom's special spicy lemon pickle. Check out my previous pickle recipes by clicking here: Pickle
Ingredients:
- Lemon small- 1/4 kg
- Salt- 1/4 cup
- Gingelly oil/mustard oil- 1/2 cup
- Mustard seeds-1 tsp
- Garlic thinly chopped-3 tbsp
- Thinly chopped ginger-3 tbsp
- Green chilly chopped- 2 tbsp
- Curry leaves-3 springs
- Turmeric powder- 1/4 tsp
- Kashmiri chilly powder- 1 1/2 tbsp
- Chilly powder-1 tbsp
- Fenugreek powder- 1/4 tsp
- Mustard powder- 1/4 tsp
- Asafoetida- 1/4 tsp
- Salt-to taste
- Vinegar- 1/2 cup
Preparation:
- Wash the lemon well and pat it dry with a kitchen towel.
- After that cut each of the lemon in to 4 pieces.
- Mix 1/4 cup of salt with lemon pieces.
- Add it in to an air tight glass jar; The top of the lemon pieces must cover by sprinkling salt.
- Let it rest for at least two weeks or up to a month. (shake the bottle well in every two or three days).
- Now the lemon pieces are enough tender.
- Avoid the salt water in the bottle and keeps the lemon pieces aside for pickling.
- Heat gingelly oil in a pan; splutter mustard seeds.
- Add curry leaves, garlic, ginger and green chilly chopped.
- Saute for about 4 minutes until nice aroma spreads.
- Add all the powders; give a quick mix and then add the lemon pieces.
- Mix well for two minute and add vinegar.
- When it boils switch off the flame.
- Allow to cool completely and keep in an air-tight container for long use.
