Chakka Kinnathappam / Steamed Jack-fruit Cake

 Kinnathappam is a traditional Malabar Style steamed rice cake. Here is jack fruit flavored rice cake preparation. It tastes delicious and healthy too...

  1. Raw rice-1cup
  2. Jackfruit pureed in a blender- 1 cup
  3. Coconut milk-1cup(without adding water)
  4. Jaggery-3 or 4 cubes (as per sweetness)
  5. Cooked rice-1 tbsp
  6. Cardamom-2 nos
  7. Salt-a pinch
  8. Ghee-1 tsp
  9. Roasted cashew and almonds-few
  • Soak the rice in water for 3 hours.
  • Grind it with coconut milk, cardamom,  cooked rice and salt to a fine paste.
  • Add jack fruit puree and melted jaggery syrup in to it ( add water if necessary to make dosa batter consistency).
  • Pour it in to a ghee greased cooking plate,  spread the roasted cashew nuts and almond.
  • Steam cook it for about 15 to 20 minutes until done (Insert a tooth pick and check it comes out clean).
  • After cools down cut them in to pieces and serve.
  • It tastes more delicious after one day by keeping in fridge.
