Kerala parotta is a layered flaky flat bread. It can easily make at home with simple efforts. Normally its made with all purpose flour. Wheat porotta is quilt free version and tastes great. I already added the recipe of wheat porotta; just when i started my blogging. Here is another quick and easy method of making wheat porotta without much more efforts.
  1. Whole wheat flour-3 cup + 1/4 cup
  2. Salt-to taste
  3. Water/Milk-to knead a smooth dough
  4. Oil-1 tbsp+1/4 cup
  • In a large mixing bowl add flour, salt, 1 tbsp of oil and add enough water (or milk) little by little; Make a smooth dough.
  • Cover it with a wet towel and rest for half an hour.
  • After that knead it again for few minutes and divide the dough in to equal 20 balls.
  • In a rolling pan. roll the ball in to thin circle. Move this in to another plate.
  • Brush a teaspoon of oil on top evenly; sprinkle a teaspoon of flour also.
  • Now roll the next ball as a thin circle and place it on top of the first circle.
  • Again add a teaspoon of oil and flour on top.
  • Now roll the next ball and repeat the process for about 10 balls.
  • Now cut this layered parathas in to thin strips (an inch width of 6-8 strips).
  • Roll the strip in to a ball again. Make all the balls in this way.
  • Now take a ball and roll it on the rolling pin by applying oil or flour in to a thick circle.
  • Made all the porotta's in this way.
  • Heat a pan and cook the porotta on both sides by applying a teaspoon of oil on both sides until golden and cooked well.
  • After cooking 5-6 porotta's place them one under one and give nice tap with the hands (still it's hot). (by doing so;the flakes of porotta are clearly visible).
  • Serve them hot with the choice of your curry.
