Vegetable Upma

Vegetable Rava Upma is one of most common staple Indian breakfast menu. It is simple easy to make and lots of variations in each places. We can make it with or without adding vegetables. Adding veggies make them a perfect balanced main course. Some of them eat it as snack also.For making soft upma; the water quantity is always confusing. Actually it depends on which type of upma; you liked. For dry separate rice like upma we need to add the same amount of water that of semolina.  For soft and smooth texture add little more water than sooji. For mushy soft upma; need to add double quantity of water.

  1. Semolina/sooji/rava-1 cup
  2. Boiling Water-1 1/2 cup
  3. Oil-1  1/2 tbsp
  4. Mustard seeds- 1/2 tsp
  5. Cumin seeds- 1/4 tsp
  6. Urad dal- 1/4 tsp
  7. Peanuts split-1 tsp
  8. Chana dal roasted-1 tsp
  9. Dry red chilly-1 large
  10. Onion chopped- medium
  11. Thinly chopped ginger- 1/2 tsp (optional)
  12. Curry leaves-1 spring
  13. Green chilly split-2 (as per spice tolerance)
  14. Chopped vegetables- 1/2 cup (carrot,beans,fresh pea)
  15. Salt-to taste
  • Heat a pan with oil; splutter mustard seeds followed by cumin seeds, urad dal, chana dal and pea nuts.
  • Add dry red chilly split, curry leaves and chopped ginger; saute for a minute.
  • Ada onion and chopped vegetables.
  • Saute for few minutes (about 5 minutes) until the veggies are cooked.
  • Add sooji and roast for another few minutes in low flame until the sooji gets roasted.
  • Add salt and mix well.
  • Carefully pour boiling water and mix thoroughly.
  • Mix well for one to two minutes; cover the lid and cook on low fame for another a minute.
  • Switch off the flame and serve warm with a cup of tea!!!
