Tomato Thokku
Tomato thokku is an instant version of tomato pickle. It has longer shelf life and tastes absolutely delicious It is a nice combo with dosa, idli, chapathi and rice. Here is the easy recipe for tomato Thokku.
Ingredients:
- Tomato-1/2 kg
- Oil- 1/4 cup
- Mustard seeds-1 tsp
- Cumin seeds- 1/4 tsp
- Pearl onion chopped/shallots-1/4 cup
- Thinly chopped ginger-1 tsp
- Curry leaves-3 springs
- Turmeric powder- 1/2 tsp
- Chilly powder-1 tbsp (as per spice tolerance)
- Asafoetida / hing/ kayam- 1/2 tsp
- Fenugreek seeds powder- 1/4 tsp
- Salt-to taste
- Tamarind-half of lemon size ball
Preparation:
- Soak the tamarind in 1/2 cup of hot water.
- Heat oil in a pan; splutter mustard seeds followed by cumin seeds.
- Add shallots chopped and ginger; saute until nice golden.
- Add curry leaves, turmeric powder, chilly powder, hing and fenugreek powder; mix well.
- Quickly add thinly chopped tomato pieces and salt; saute until all the tomato pieces are mashed well.
- Squeeze the pulp of tamarind and add it in to the tomato gravy.
- Mix well and cooks on low flame for about 10-15 minutes or until oil floats on top.
- Switch off the flame and allow to cool.
- Store them in an airtight container for a week in normal temperature or in fridge for a month.
