Omelette- Mint Chutney Sandwich

Sandwiches are pretty good slices for breakfast, for lunch box, snack or for dinner.  Here is an easy and healthy Indian style bread sandwich using mint chutney and omelette.
  1. Bread slices-6 pieces
  2. Egg-2 large
  3. Thinly chopped veggies- 1/2 cup (onion, carrot, tomato nd green chilly)
  4. Salt-to taste
  5. Pepper powder-1/2 tsp
  6. Oil-1 tsp
  7. Mint leaves- 1/4 cup
  8. Coriander leaves-2 tbsp
  9. Curry leaves-1 spring
  10. Coconut grated-2 tbsp
  11. Cashew nut-6 numbers
  12. Ginger-a thin small piece
  13. Green chilly-1 large
  14. Lemon juice-1 tsp
  15. Salt-to taste
  16. Butter-to toast
  • For making omelette mix the ingredients from  1-4 .Apply oil in a pan and prepare the thick omelette. Keep aside.
  • For preparing mint chutney blend the ingredients from 6-14 without adding any water.
  • Now take a slice of bread . Apply half a tablespoon of mint chutney on top evenly.
  • Above that place a slice of omelette.
  • Above that again spread half a tablespoon of mint chutney.
  • Cover it with another slice of bread and press slightly to join.
  • Add a tablespoon of butter in a sandwich maker (or tawa) and toast the bread on both sides until nice golden and crisp.
  • Serve soon with a cup of tea and enjoy!!!
