Coconut Chicken Curry



Coconut milk nourishes all the curry to be creamy and rich. Coconut chicken curry is an absolutely delicious and creamy chicken curry that goes well with Kerala Porotta or enjoy it in side with rice.

Ingredients for Marinating the Chicken:
  1. Chicken- 1/2 kg
  2. Turmeric powder- 1/2 tsp
  3. Chilly powder-1 tsp
  4. Ginger garlic paste-1 tbsp
  5. Cumin powder- 1/2 tsp
  6. Garam masala powder- 1/2 tsp
  7. Coriander powder-1 tbsp
  8. Salt-to taste
  9. Lemon juice-1 tbsp
  10. Oil-for shallow frying
Other Ingredients:
  1. Onion-1 large
  2. Tomato-1 large
  3. Thick coconut milk- 1/2  cup
  4. Thin coconut milk-1/2 cup
  5. Fresh cream- 1/4 cup
  6. Coriander leaves-to garnish
  7. Coconut pieces- 1/4 cup
Preparation:
  • Marinate the chicken pieces with ingredients under marinating and rest for about 1/2 hour in fridge.
  • Add oil in a pan ; fry the coconut pieces until nicely browned. take it out and keep aside.
  •  Next; add the chicken pieces.
  • Cover it and cooks for about 10-15 minutes by stirring often until nice golden and cooked. Keep aside.
  • In the remaining oil; add chopped onions and saute until transparent.
  • Add green chilly and curry leaves.
  • Puree the tomato in a blender and add it in to the pan.
  • Mix well and saute until dry.
  • Add the cooked chicken pieces in to it.
  • Add thin and thick coconut milk; cooks on medium flame for about 10 minutes until oil floats on top of the curry.
  • Add fresh cream; mix well and switch of the curry by adding fried coconut pieces and coriander leaves chopped.
