Arabian Chicken Stew
Arabian style chicken stew is a mildly spiced yet nice red colored gravy in which the chicken and vegetable pieces are immersed. It tastes really delicious and simple easy to prepare. All the Gulf savory dishes are mildly spiced; We can adjust the spice according to our taste.
Ingredients:- Chicken- 1/2 kg
- Oil-2 1/2 tbsp
- Cumin seeds- 1/2 tsp
- Onion cubed-1 large
- Chopped potato- 1/2 cup
- Chopped carrot- 1/2 cup
- Chopped beans- 1/4 cup (optional)
- Green chilly slit-2 numbers
- Crushed ginger and garlic-1 tbsp
- Tomato-two large
- Turmeric powder- 1/2 tsp (optional)
- Kashmiri chilly powder-1 tbsp (according to spice tolerance)
- Garam masala powder- 1/2 tsp
- Chopped coriander leaves-one handful
- Add tomatoes in the boiling water and cook for 5 minutes.
- Add these cooked tomatoes in to cold water and after cools down peel its skin and blend the tomatoes in to smooth puree. Keep aside.
- Heat oil in a pan; add cumin seeds and splutter.
- Add onion and saute until transparent.
- Add the medium cut chicken pieces and enough salt; saute for about 10-15 minutes until both sides are slightly golden.
- Add crushed ginger garlic and saute for a minute.
- Add the vegetable pieces and green chilly; cover cooks for another 15 minutes on medium-low flame. (stir occasionally).
- Add turmeric powder and chilly powder.
- Add tomato puree and cooks for another 5 minutes.
- Add enough hot water (about 1 cup) and cooks the gravy until oil floats on top (about 10 minutes).
- Sprinkle garam masala powder and coriander leaves; mix well and switch off the flame.
