Kaipathiri / Rice Flour Roti

 Kaipathiri (rice flour Roti) is a traditional Malabar (a region in South India) breakfast recipe. It is a thick roti made with rice flour and grated coconut. One in number is enough to eat for one person. Normally it is served along with coconut milk and a curry of choice. The roti is soaked in coconut milk for about 5 minutes before serving; makes the roti really soft and delicious to eat.
 Ingredients:
  1. Roasted Rice Flour-2 cup
  2. Grated coconut- 1/2 cup
  3. Thinly chopped shallots- 2 tbsp
  4. Cumin seeds- 1tsp
  5. Salt-to taste
Preparation:
  • Boil 2 cups of water in a wide bottom pan by adding salt.
  • When it boils, add roasted rice flour, grated coconut, cumin seeds and shallots; mix well in low flame for a minute and switch off the flame.
  • Now transfer it in to  a wide plate and knead a smooth dough (knead it while still hot but that can mange with your hand).
  • Make tennis ball sized big balls out of it (almost 6-7 balls).
  • Now in a smooth surface (like aluminium foil, banana leaf) flatten the ball (by pressing with your hands) in to 1/4 inch thick round disc (pathiri).
  • Heat a skillet (pan or clay pot) and cook the roi on both sides (in medium high flame) until both sides get cooked .
Note:
  • If you are using store bought roasted rice flour use only 1 3/4 cups of water  (for 2 cups rice flour) for cooking. Also add 1 tsp of oil in to the boiling water. Because the store bought powder is bit sticky in hands.
  • If you are using homemade flour; Then you can add almost 2 1/4 cups of water to make a smooth dough.
