Coconut Poli



Poli is a paratha stuffed with sweetness (rarely savory). It is Made on  the special occasions like Holi. There are variety of stuffing's for making poli. One of the common stuffing is with dal, and that is Puran Poli. Here is another delightful poli recipe using sweet coconut filling..Let's check out the simple and delicious preparations..

Ingredients:
  1. Wheat flour-2 cup (or all purpose flour)
  2. Ghee-1 tbsp
  3. Turmeric powder-a pinch (optional)
  4. Salt-to taste
  5. Hot water-to knead the dough
Ingredients For The Filling:
  1. Grated coconut-1 cup
  2. Jaggery cubes-4 medium (as per sweetness)/ grated jaggery-1 cup
  3. Cardamom crushed-1 pinch
  4. Ghee-to cook poli
Preparation:
  • In a mixing bowl add wheat flour, turmeric powder, melted ghee and salt.
  • Add hot water little by little ad make a smooth dough out of it.
  • Cover the dough and let it rest until the filling gets ready.
  • Heat a pan with jaggery cubes and 1/4 cup of water.
  • When the cubes melts completely; Strain the jaggery syrup to remove impurities.
  • Now add the coconut grated and cardamom powder to jaggery syrup and cooks until the mixture get dried and absorbs all the syrup.
  • Allow the mixture to cools down completely.
  • Now make small lemon sized balls out of it.
  • Divide the wheat flour dough in to equal number of double sized balls.
  • Take a dough and roll it in to a thin circle inside your palm,
  • Place a sweet coconut ball inside it and cover it again like a ball.
  • Flatten it again carefully and by applying some flour gently roll it in to a paratha.
  • Prepare all the poli's in this way.
  • Heat a heavy pan, Cook the poli on medium heat by pressing well on both sides with ladle and applying a teaspoon of ghee for each poli.
  • Cook until nice golden and cooked well.
  • Serve warm and enjoy with a cup of tea!!!!
