Rasmalai with Milk Powder

Rasmalai is a popular Indian dessert rich in milk. The spongy balls floating on the creamy milk looks really yummy and mouth watering. The milk dumplings are made by curdling process and take time to get ready. Here is a quick and instant version of rasmalai using milk powder. 
  1. Milk powder-1 cup
  2. All purpose flour-1 tsp
  3. Baking powder-1/4 tsp
  4. Egg-1(room temp)
  5. Milk-500 ml
  6. Sweetened condensed milk- 1 tin
  7. Cardamom powder-a pinch
  8. Saffron-two pinch
  9. Chopped nuts n fruits-to garnish
  • In a mixing bowl add milk powder, flour, baking powder and egg.
  • Mix it well and make a smooth dough out of it. (if need apply little oil in your palm for kneading)
  • Cover and let it rest for few minutes until the rabdi gets ready.
  • Soak saffron in two tablespoon of milk.
  • Boil milk in a pan by adding condensed milk and cardamom powder.
  • Stir well continuous until it reached thick milk rabdi.
  • Add saffron soaked milk and cardamom powder; make the flame low.
  • Grease your hands well with oil.
  • Make small balls out of the prepared dough and just flatten it by pressing lightly (make rasmalai without any cracks..).
  • Add the prepared balls one by one in to the rabdi and cover cooks for about  8-10 minutes on low flame until Rasmalai gets double in size and cooked well.
  • Switch off the flame and garnish with chopped nuts.
