Tomato Soup

The better way to celebrate winter is nothing, but with a cup of hot soup. Tomato soup is an easy and quick recipe preparation. For making this; Choose the tomatoes which are correctly ripen and well colored. Then it results a nice colored delicious soup.
Ingredients:
- Tomato ripen-4 no's
- Olive oil / oil-1 tbsp
- Chopped ginger- 1/4 tsp
- Chopped garlic- 1/2 tsp
- Pepper powder-1 tsp
- Salt-to taste
- Coconut cream-3 tbsp
- Toasted bread pieces-to garnish
Preparation:
- Boil two cups of water in a pan; add tomatoes in to it and cook for 5 minutes.
- Add these cooked tomatoes in to the cold water and after cools down; peel it's skin.
- Blend this peeled tomatoes in blender to a smooth puree.
- Heat oil in a pan; add chopped ginger and garlic; saute for a minute.
- Add tomato puree along with 1 1/2 cup of water.
- Add salt and pepper powder.
- Cover cooks it on low flame for about 15-20 minutes.
- After that open the lid; when the soup just gets thickening add coconut cream and mix well.
- Switch off the flame and add in to serving bowls.
- Garnish on top with toasted bread pieces and serve hot.
