Potato Murukku

Murukku is a crispy Indian tea time snack.Usually we used to buy it from the stores. But we can easily make it at home; if we have the murukku maker (star shaped mold of idiyappam maker). Here is an easy murukku recipe using potato and rice flour.

  1. Potato -1 large
  2. Rice four lightly roasted-1 cup
  3. All purpose flour (maida)-1 tbsp
  4. Cumin seeds- 3/4 tsp
  5. Butter melted- 1 1/2 tbsp
  6. Hing (asafoetida / kayam)- a pinch
  7. Salt-to taste
  8. Water- enough to kead the dough
  9. Idiyappam mold
  • cook washed potato as a whole in pressure cooker for 5 whistles or until cooked well.
  • After cools down open it; peel the skin of potato and add it in to a blender just mash with your hands.
  • Blend for a minute (without adding any water) until the potato become creamy.
  • In a large bowl add rice flour, all purpose flour, cumin seeds, hing, salt and butter melted.
  • Add the potato puree in to it; mix well.
  • Add water little by little enough to knead a smooth dough.
  • Now took the murukku mold and place a part of dough inside it.
  • Squeeze it and make round shaped murukku out of it.
  • Heat oil in kadai; when it is hot add the prepared murukku  in to it (at the the time of adding murukku the oil must be very hot and after that you can make it in to medium flame and deep fry in medium flame until nice golden (over frying makes it hard and bitter).
  • Drain in to paper towels to avoid excess oil.
  • Serve warm or after cools down.
  • Store in an air-tight container for long use.
