Butterscotch Cake

The basic ingredients for a butterscotch are brown sugar and butter. The other ingredients may vary according to the recipe calls for. Here is a simple moist cake recipe flavored with Butterscotch sauce.

  1. Flour- 2 1/2 cup
  2. Milk- 11/2 cup
  3. Powdered sugar- 1/2 cup
  4. Brown sugar- 1/2 cup
  5. Oil-3/4 cup (canola / sunflower)
  6. Eggs-2 
  7. Vanilla essence-2 tsp
  8. Baking powder-2 tsp
  9. Salt a pinch
Preparation of cake:
  • All the ingredients for the cake must be in room temperature (egg, milk and oil).
  • Sieve all he dry ingredients together (flour; baking powder and salt).
  • Mix it well with brown sugar.
  • Beat eggs by adding powdered sugar in a large bowl until creamy and fluffy (about 5 minutes).
  • Then add oil and vanilla essence.
  • Add milk and flour mix alternatively in three additions of each. (start with adding milk and end with flour)
  • Pour the batter in to a greased baking tray and bake it in the pre-heated oven for about 40-45 minutes at 180 degree. 
  • Allow the cake to cools down completely before frosting.
For Frosting:
  1. Whipping cream-1 pint
  2. Icing sugar-1/2 cup
  3. Vanilla essence- 1/2 tsp
  • Whip the cream in a chilled bowl by adding vanilla essence until fluffy peaks obtain.
  • Cut the cake in to two pieces and apply the cream evenly on top of each layer as a thick coating.
  • Refrigerate the cake for two hours to set the cream.
For Butterscotch Sauce:
  1. Butter-50 gm
  2. Fresh cream- 150 ml
  3. Brown Sugar-3/4 cup
  4. Vanilla essence-11/2  tsp
  5. Salt-a pinch
  • Add all the ingredients for sauce in a pan. Heat it up and bring to boil.
  • Stir well and allow to cook on low flame for further five minutes (until slightly thickens).
  • Switch off the flame and allow to cools down completely (rest for one hour at room temperature to cool). 
  • Apply it evenly over the cake and enjoy...
