Veggie-Egg Rice Noodles

Noodles are a popular Indo-Chinese food. Now a days;  Its one of the kids favorite tiffin. Rice noodles are simply delicious and healthy too. Add all the choice of your vegetables and scrambled eggs to make it more yum.
  1. Rice Noodles- 200 gm
  2. Oil-2 tbsp
  3. Garlic minced-1 tbsp
  4. Chopped green chilly-1 or 2
  5. Carrot chopped- ¼ cup
  6. Beans chopped- ¼ cup
  7. Capsicum chopped- ¼ cup (different colors)
  8. Onion chopped- ¼ cup
  9. Spring onion chopped- ¼ cup
  10. Soy sauce-2 tsp
  11. Tomato ketchup- 2 tbsp
  12. Chilly sauce-1 tsp (optional)
  13. Salt-a pinch
  14. Pepper powder- ½ tsp

  • Cook rice noodles in boiling water by adding salt for few minutes until done (it takes more cooking time than other noodles)
  • Strain it and keep under cold running water for few seconds.
  • Now heat a pan with oil, add garlic minced and green chilly; saute a minute.
  • Add onions, carrots, cabbage and beans (chop all the vegetables in to thin long strips).
  • Saute for two minutes until soft.
  • Add capsicum, salt and pepper powder;  saute for a minute.
  • Add soya sauce, tomato ketchup and chilly sauce.
  • Stir fry two eggs in another pan, by adding little salt and pepper powder.
  • Add it in to the veggie mix along with the noodles.
  • Gently mix for two minutes and switch off the flame.
  • Serve hot and enjoy the great taste....
