Agathi Flower Stir Fry

It's about something healthy. The humming bird flower/ Agati keerai poo / August tree flowers  resembles little birds and they are eaten alone or as mixed in curries,  salads and for batter frying too. Agathi keerai is a medicinal plant and have innumerable health benefits (cure ulcers in stomach; good for fever, act as a antidote for poisons, cures insanity, helps digestion, cooling, cure night blindness and tumors). Its leaves, fruits and flowers are edible. The botanical name is "Sesbania grandiflora".
Even it has a slightly bitterness in taste try to include in your diet as much as possible (whenever you get) by considering its health benefits. Here is simple Kerala style stir fry (poriyal ) recipe using its flowers.

Ingredients:
  1. Agathi keerai flowers chopped- 2 cup (thickly packed)
  2. Coconut grated- 1/4 cup
  3. Green chilly-2 nos
  4. Shallots / pearl onions-2 nos
  5. Salt-to taste
  6. Mustard seeds- 1/2 tsp
  7. Coconut oil- 1 tbsp
Preparation:

  • In a blender add coconut grated, green chilly and shallots.
  • Blend for a minute to mix well.
  • Heat a pan with with coocnut oil; splutter mustard seeds.
  • Add the coconut grated mix and chopped flowers.
  • Cook for about 1 to 2 minutes or until soften.
  • Switch off the flame by adding salt and serve.
