Semolina Coconut Ladoo


Semolina coconut ladoo is an easy and quick sweet recipe using semolina and freshly grated coconut. All of them simply love this delicious ladoos. It suits for any occasions like festivel, tea time snack or for tiffin also.
Ingredients:
  1. Semolina- 1/4 cup
  2. Freshly grated coconut-1  1/2 cup
  3. Milk- 1/4 cup
  4. Sweetened condensed milk- 200 gm
  5. Saffron-few strands
  6. Ghee-2 tbsp
  7. Cardamom powder- a pinch
  8. Fried cashews chopped-2 tbsp
Preparation:
  • Soak the saffron strands in hot milk.
  • Choose thinly grated coconut by avoiding its dark parts (grate white parts only). Just give a crush for the grated coconut in blender to make it very thin.
  • Dry roast the grated coconut for 5 minutes in low flame without changing its color but absorbs all its water content.
  • Keep it aside.
  • Heat a tablespoon of ghee in a heavy bottom pan; add semolina and roast it  for few minutes without changing its color.
  • Add dry roasted grated coconut in to it (before adding to the pan;keep 1/4 cup of grated coconut for garnishing-rolling ladoos).
  • Mix well; add saffron soaked milk in to the pan and mix well (like crumbs) by crumbling.
  • Add condensed milk; cook by keep stirring the pan until the mixture starts leaving from the sides of pan.
  • At this point add remaining tablespoon of ghee, chopped cashews and cardamom powder.
  • Give  a nice mix and switch off the flame.
  • Allow the mixture to cool little (don't allow to cool completely; before that make ladoos).
  • Take few portion from the mixture and make ladoo with your greased hands.
  • After making all the ladoos; Roll each ladoo in Grated coconut.
  • Serve and enjoy the grate taste!!!
