Cream of Mushroom Soup

 The health benefits of mushrooms include relief from high cholesterol, diabetics and breast cancer. Here is a simple creamy and healthy soup recipe using mushrooms.
  1. Mushroom-1 cup
  2. Butter-1 tbsp
  3. Chopped onion-2 tbsp
  4. Chopped garlic-1 tbsp
  5. Parsley chopped- 2 tbsp
  6. Vegetable stock / water- 1 cup
  7. Thick cream- 1/4 cup
  8. Salt-to taste
  9. Pepper powder- 1/2 tsp
  • Heat butter in a pan; add mushroom, onion and garlic.
  • Saute for three minutes and allow to cool.
  • Blend it in to a coarse form along with fresh cream and heat again. (keep few mushrooms for garnishing).
  • Add vegetable stock and cook for another few minutes until reached a nice soup consistency.
  • Add salt and pepper powder. Switch off the flame.
  • Serve hot and enjoy!!!
