Cream of Mushroom Soup
The health benefits of mushrooms include relief from high cholesterol, diabetics and breast cancer. Here is a simple creamy and healthy soup recipe using mushrooms.

- Mushroom-1 cup
- Butter-1 tbsp
- Chopped onion-2 tbsp
- Chopped garlic-1 tbsp
- Parsley chopped- 2 tbsp
- Vegetable stock / water- 1 cup
- Thick cream- 1/4 cup
- Salt-to taste
- Pepper powder- 1/2 tsp
- Heat butter in a pan; add mushroom, onion and garlic.
- Saute for three minutes and allow to cool.
- Blend it in to a coarse form along with fresh cream and heat again. (keep few mushrooms for garnishing).
- Add vegetable stock and cook for another few minutes until reached a nice soup consistency.
- Add salt and pepper powder. Switch off the flame.
- Serve hot and enjoy!!!
