Carrot Soup


Carrot soup is a wonderful comforting winter treat. It is super easy to make and loaded with vitamins.
Ingredients:
  1. Carrot grated-1 cup
  2. Garlic chopped-1 tsp
  3. Ginger chopped- 1/2 tsp
  4. Parsley chopped-1 tsp
  5. Salt-to taste
  6. Pepper powder- 1 tsp (or less)
  7. Butter-1 tbsp
  8. Fresh cream-1 tbsp
  9. Toasted bread slices-to garnish
Preparation:
  • Heat a pan with butter add garlic and ginger; saute for a minute.
  • Add chopped carrots and saute for five minutes.
  • Switch off the flame.
  • Add salt and parsley.
  • After cools down, add it in to a  blender along with some water and puree it well.
  • Add it in to the pan and heat again by adding one more cup of water.
  • Add fresh cream and cooks for few minutes until reaches a soup consistency.
  • Check for salt; Add pepper powder and switch off the flame.
  • Add in to serving bowls and garnish on top with toasted read slices.
Note: Always serves the soup hot!
