Carrot Soup
Ingredients:
- Carrot grated-1 cup
- Garlic chopped-1 tsp
- Ginger chopped- 1/2 tsp
- Parsley chopped-1 tsp
- Salt-to taste
- Pepper powder- 1 tsp (or less)
- Butter-1 tbsp
- Fresh cream-1 tbsp
- Toasted bread slices-to garnish
- Heat a pan with butter add garlic and ginger; saute for a minute.
- Add chopped carrots and saute for five minutes.
- Switch off the flame.
- Add salt and parsley.
- After cools down, add it in to a blender along with some water and puree it well.
- Add it in to the pan and heat again by adding one more cup of water.
- Add fresh cream and cooks for few minutes until reaches a soup consistency.
- Check for salt; Add pepper powder and switch off the flame.
- Add in to serving bowls and garnish on top with toasted read slices.
