Caramel Coconut Flan

Ingredients:
- Thick coconut milk-1 1/4 cup
- Sweetened condensed milk-1 can
- Grated coconut- 1/4 cup
- Vanilla essence-1 tsp
- Egg-5 nos
- Milk powder-2 tbsp
- Sugar- 1/4 cup
Preparation:
- In a pan heat sugar on high flame until get dissolved and started caramelizing. Don't stir the sugar while cooking; but just swirl the pan. Switch off the flame when it gets fully caramelized. (use the pudding making pan for making caramel; if not quickly transfer it to the pudding tray just after making; or it gets hardened.). Keep it aside.
- In a blender add eggs, milk powder, vanilla essence, coconut milk and condensed milk.
- Blend well until completely dissolved,
- Add grated coconuts in to it and mix well.
- Pour it above the prepared caramel.
- Steam cooks for about 25 minutes on medium flame. (Add water in a pan; place a stand in the water and above that stand; place the pudding tray. Cover the pudding tray; and also cover the cooking pan.).
- Invert the pudding to a serving dish only after cools down.
- Garnish on top with roasted coconut flakes.
- Chill for an hour and serve.
Note:
- Take the coconut milk without adding any water; or use tinned coconut milk.
- Also instead of freshly grated coconut; you can use store bought coconut flakes.
- If you are not covering the Cooking pan; then it took one hour to get the pudding cooked.
