Bombay Chicken Biriyani
Bombay biriyani is an easy and flavorful rice preparation. Unlike other biriyani recipes; not much spices are used for making this. Fried potatoes are also a main attraction of this lovely biriyani.

- Chicken-1 kg
- Potato- 1/4 kg
- Onion-4 nos
- Tomato-4 nos
- Ginger garlic paste-2 tbsp
- Green chilly slit-3 nos
- Turmeric powder-1/2 tsp
- Chilly powder-2 tbsp
- Coriander powder-2 tbsp
- Thick curd-1 cup
- Lemon juice-1 tbsp
- Salt-to taste
- Chopped coriander leaves-1/4 cup
- Chopped mint leaves-1/4 cup
- Oil-for frying
- Kewra water-1 tsp
- Basmati rice-1 kg
- Cardamom-4 nos
- Clove-4 nos
- Cinnamon-a small stick
- Bay leaf-1
- Pepper cons-few
- Salt-to taste

Preparation:
- Wash and soak the basmati rice in water for 30 minutes.
- Boil enough water for cooking rice by adding salt and whole spices.
- Add rice and cooks until 3/4 th cooked.
- Drain it and keep aside.
- Peel and cut the potatoes in to large pieces (same as the chicken pieces) Boil potatoes in salted water for five minutes.
- Drain it well and deep fry in hot oil until nice golden in color. Keep it aside.
- Cut the chicken in to medium small pieces.
- Thinly slice the onions and fry it in hot oil until nicely golden and crisp (don't fry until brown; then it tastes bitter).
- Marinate the chicken pieces with ingredients from 5-12.
- Also add half of mint leaves, coriander leaves chopped and half of fried onions.
- Mix well and rest in fridge for one hour.
- Add a tablespoon of ghee in a pan; add chopped tomatoes and saute until mashed well.
- Add marinated chicken pieces and cover cooks for few minutes until cooked half done.
- Above this half cooked chicken masala; spread basmati rice. Top it with remaining fried onions, 1 tbsp of oil, kewra water, mint and coriander leaves.
- Cover the pan (without escaping any steam); slow cook it or do the dum process for about 45 minutes.
- After that open the lid, add fried potato pieces and give a good mix.
- Serve hot in accompany with raitha and pickle.
