Pumpkin Halwa

alt-halwaPumpkin Halwa is a traditional Indian sweet recipe using pumpkin, coconut milk, jaggery, cardamom and nuts.
  1. Pumpkin grated-4 cup
  2. Thick coconut milk-5 cup (or use milk)
  3. Jaggery-1 kg
  4. Cardamom crushed-4 nos
  5. Fried cashew and raisins- 1/2 cup
  6. Ghee- 1/4 cup
  • Melt jaggery by adding 1/4 cup of water; strain it and keep aside.
  • Add 2 tbsp of ghee in a wide pan; add chopped pumpkin.
  • Saute for few minutes until the pumpkins become soft and mashed consistency.
  • Then add coconut milk and jaggery melted; allow to boil.
  • Stir often without sticking the bottom.
  • Cooks for about 20-25 minutes (by stirring continuously) until all the milk get thickened and starts leaving from the sides (add little ghee in intervals).
  • At this stage add a tablespoon of ghee, cardamom powder and fried cashew and raisins ; switch off the flame.
  • Allow to cool and serve.
  • Note: You can store it in an air tight container for up to 3 days. (or a week in fridge).
