Spinach Pakoda


The crispy spinach fritters are quick easy to make and a perfect accompaniment with a cup of tea.
Ingredients:
  1. Onion sliced- 1 large
  2. Palak / Spinach thinly chopped-1 cup
  3. Thinly chopped ginger-1 tbsp
  4. Thinly chopped green chilly-2 nos
  5. Thinly chopped curry leaves-1 spring
  6. Thinly chopped coriander leaves-1 tbsp
  7. Turmeric powder- ¼ tsp
  8. Chilly powder-1 tsp
  9. Salt-to taste (little)
  10. Baking soda-a pinch
  11. Rice flour-1 tbsp
  12. Gram flour / besan flour- 1 tbsp
  13. All purpose flour/ maida- 1 tbsp
Preparation:
  • Mix chopped spinach, onion sliced, ginger chopped, green chilly, curry leaves, turmeric powder, chilly powder and salt together in a bowl.
  • Mix well with hands for a minute.
  • Keep covered for 15 minutes (to ooze out the water content in it).
  • Now mix it with besan flour, rice flour, all purpose flour, baking soda and coriander leaves chopped.
  • Mix well; no need to add water to make a sticky dough as the onion contains water itself. If necessary add little water.
  • Heat oil in a pan; add small parts of onion mix in to oil.
  • Fry it in low flame until nice golden in color.
  • Drain in to paper towels and serve hot along with a cup of tea.
