Spinach Pakoda
Ingredients:
- Onion sliced- 1 large
- Palak / Spinach thinly chopped-1 cup
- Thinly chopped ginger-1 tbsp
- Thinly chopped green chilly-2 nos
- Thinly chopped curry leaves-1 spring
- Thinly chopped coriander leaves-1 tbsp
- Turmeric powder- ¼ tsp
- Chilly powder-1 tsp
- Salt-to taste (little)
- Baking soda-a pinch
- Rice flour-1 tbsp
- Gram flour / besan flour- 1 tbsp
- All purpose flour/ maida- 1 tbsp
- Mix chopped spinach, onion sliced, ginger chopped, green chilly, curry leaves, turmeric powder, chilly powder and salt together in a bowl.
- Mix well with hands for a minute.
- Keep covered for 15 minutes (to ooze out the water content in it).
- Now mix it with besan flour, rice flour, all purpose flour, baking soda and coriander leaves chopped.
- Mix well; no need to add water to make a sticky dough as the onion contains water itself. If necessary add little water.
- Heat oil in a pan; add small parts of onion mix in to oil.
- Fry it in low flame until nice golden in color.
- Drain in to paper towels and serve hot along with a cup of tea.
