A typical south Indian Curry with lots of veggies, in its easiest way of making!!!
  1. Lentil / Tuvar dal- 1/2 cup
  2. Chopped veggies (medium sized pieces)- 2 cup (beans, potato, drumstick, carrot, brinjal, yam, ash gourd, okra, onion and tomato)
  3. Sambar powder- 1 1/2 tbsp
  4. Turmeric powder- 1/2 tsp
  5. Chilly powder- 1 tsp
  6. Hing / kayam- a pinch
  7. Green chilly slit- 2 nos
  8. Tamarind pulp water- 1/2 cups
For Seasoning:
  1. Coconut oil-2 tbsp
  2. Mustard seeds- 1 tsp
  3. Methi/ fenugreek seeds- 1/4 tsp
  4. Shallots chopped-1 tbsp
  5. Garlic chopped- 1/2 tsp
  6. Dry red chilly-2 nos
  7. Hing-a pinch
  8. Curry Leaves-2 springs
  • Cook the washed lentils in pressure cooker along with 1 1/2 cup of water, hing, turmeric powder and salt for two whistles.
  • Open the lid after released the pressure by itself.
  • Add chopped veggies, sambar powder, green chilly, chilly powder, tamarind pulp water and 1 cup of water.
  • Pressure cooks for only one more whistle.
  • Now do the seasoning.
  • Heat coconut oil in a pan, add mustard seeds, when it splutters add fenugreek seeds.
  • Add shallots and garlic, saute until golden.
  • Add dry red chilly, curry leaves and hing.
  • Switch off the flame and add it on top of the sambar.
  • Mix well before serving.
