Pumpkin Erissery

Pumpkin-Red bean erissery is a popular and delicious vegetarian curry served on Onam Sadhya .
Ingredients:
  1. Pumpkin chopped-2 cup
  2. Dry red-beans- 1/2 cup
  3. Cumin seeds- 1/2 tsp
  4. Turmeric powder- 1/2 tsp
  5. Chilly powder- 1/2 tsp
  6. Salt-to taste
To grind:
  1. Grated coconut- 1/2 cup
  2. Green chilly-2 nos
  3. Shallots/small onion-3 nos
For seasoning:
  1. Coconut oil-1 tbsp
  2. Mustard seeds- 1/2 tsp
  3. Dry red chilly-2 nos
  4. Curry leaves-2 spring
  5. Coconut pieces-few
Preparation:
  • Soak red beans in water for overnight.
  • After that pressure cooks it for three whistles or until half done.
  • After releasing the pressure by itself; open the lid and add chopped pumpkin pieces.
  • Cooks for another one or two whistles by adding enough little water, turmeric powder, chilly powder and salt.
  • After that dries out the excess water by open cooking (if any).
  • Grind coconut with green chilly, cumin seeds and shallots to a coarse form.
  • Add it in to the cooked pumpkin-red beans mix and open cooks for another one minute.
  • Switch off the flame and do seasoning.
  • Heat coconut oil in a pan; add mustard seeds, when it splutters add  coconut pieces and fry for few minutes until nice golden.
  • Add dry red chilly and curry leaves.
  • Add it in to the curry and serve hot with steamed rice.
