Eggless Gulab Jamun

Gulab Jamun is a traditional Indian dessert. The spongy and yummy texture of Gulab jamun makes everyone mouth watery and of course it is one of favorite dessert of all sweet tooth's. It is a milk solids based dessert; simple easy to make at home. Serve  it warm or topped with ice cream. Here is the recipe of Eggles gulab jamun with simple ingredients.
  1. Milk powder-1 cup
  2. Maida / flour- 1/4 cup
  3. Baking Soda- a pinch
  4. Thick Curd- 1/4 cup (or more enough to make a smooth dough consistency) (Instead of thick curd you can use, fresh cream also).
  5. Cardamom powder- 1/4 tsp
  6. Ghee-1 tsp
  7. Oil /ghee-for deep frying
  8. Sugar- 1 1/2 cup
  9. Water- 1 1/2 cup
  10. Saffron strands -few.
  11. Sliced nuts-to garnish (optional)
  • Mix all the dry ingredients in a bowl (flour, baking sod, milk powder and cardamom powder).
  • Ad curd little by little and make a smooth dough (the dough will be little sticky consistency and by rest for few minutes, milk powder  absorbs the extra moisture).
  • Cover it and rest for 15 minutes. (mean while prepare the syrup).
  • Heat sugar and water in a pan, boil for few minutes (6-8 minutes) to get a single string consistency.
  • Add saffron strands crushed and sliced nuts; keep it aside.
  • Grease your palm with oil and knead the dough again and make small balls out of it (without any cracks).
  • Heat a frying pan with oil (or ghee) and when it is hot make the flame to medium.
  • Fry the prepared balls until dark golden. (Roll the gulab jamuns in oil while frying to get unique brown color in all the sides).
  • Add the fried balls in to hot syrup and soak for 2 hours before serving. (cover the pan while soaking and make sure that, there will be enough syrup to fully cover the gulab jamuns).
