Schezwan Fried Rice

Schezwan fried rice is a mildly spiced, easy and delicious rice preparation. We can make it purely vegetarian, or with scrambled eggs or non-veg according to our choice. As though it’s red in color; its not that much spicy and the spiciness can control by our preparation.
  1. Butter / oil- 2 tbsp
  2. Garlic chopped- 1 ½ tbsp
  3. Dry red chilly- 5 nos
  4. Tomato paste-2 tbsp
  5. Soya sauce- 1 tbsp
  6. Vinegar-1 tsp
  7. Mixed vegetables chopped- 1 ½ cup (onion. Carrot, beans, green pea, cabbage n bell pepper)
  8. Salt-to taste
  9. Basmati rice- 1 cup
  10. Spring onion chopped- 2 tbsp
  • Wash and soak basmati rice in water for 30 minutes.
  • Drain it and cook in enough more boiled water and salt until done.
  • Drain the cooked rice and keep aside.
  • Soak dry red chilly in ¼ cup of hot water for 15 minutes. (If you don’t want much spiciness removes the inner seeds of the red chilly).
  • In a blender add this soaked red chilly along with little soaked water and make a fine paste.
  • Heat a pan with butter or oil.
  • Add garlic and sauté for a minute.
  • Add the red chilly paste in to it.
  • Mix well for half a minute.
  • Add tomato paste, soya sauce and vinegar.
  • Add chopped vegetables and salt.
  • Sauté for 5 minutes until vegetables lost its raw taste.
  • Add cooked rice in to it and mix gently for two minutes.
  • Sprinkle spring onion on top and switch off the flame.
  • Serve hot and enjoy with the choice of your curry or tomato paste or pickle J J J 
  • If you want to add egg; scramble it with little salt and pepper powder and add it in to the above pan; just before adding rice.
  • Minced chicken or fried shrimps can also be added to it in the same way.
