Raspberry Oat Muffins

Raspberry oat muffin is a tender moist cake with the goodness of fresh fruit and crunchy oats. These homemade muffins are pretty delicious and easy to make. Both kids and adults will surely crave for it. For a healthy treat you can replace the all purpose flour with wheat flour.
  1. All purpose flour – 1 ¾ cup (or wheat flour)
  2. Old fashioned oats-1 cup
  3. Raspberries- ¾ cup
  4. Eggs-2 large
  5. Baking powder-2   tsp
  6. Butter melted- 100 gm
  7. Brown sugar- ½ cup
  8. Granulated sugar- ½ cup
  9. Salt- a pinch
  10. Vanilla extract- 1 tsp
  • In a bowl; mix the dry ingredients (flour, baking powder, oats and salt.
  • In another large bowl; beat butter melted with brown sugar and powdered sugar.
  • Add eggs one by one and beat well.
  • Add flour mixture in to it by folding well in three additions.
  • Add raspberries and just give a gentle mix without breaking them. (the batter should be in thick form).
  • Fill it in the muffin cup about its ¾ th level.
  • Bake it in the preheated (180 degree) oven for about 20-25 minutes until a skewer is inserted and check whether it comes out clean.
