Mutton Boti Roast / Aatu kudal Roast

In mutton, there is nothing to be wasted. We can use all its body parts for cooking. Boti roast or gizzard roast is made with goat’s intestine. Even though the cleaning part is a tedious job; it tastes great.
  1. Goat intestine (kudal) – 250 gm (washed and cleaned)
  2. Shallots/ small onion chopped-1 cup
  3. Garlic crushed- 2 tbsp
  4. Ginger crushed-1 tsp
  5. Green chilly-1
  6. Turmeric powder- ½ tsp
  7. Pepper powder- 1 ½ tbsp
  8. Cumin powder- ½ tsp
  9. Coriander powder-1 tbsp
  10. Garam masala powder- ½ tsp
  11. Salt-to taste
  12. Coconut oil- 2tbsp
  13. Fennel seeds- ¼ tsp
  14. Curry leaves- 2 springs
  • Mix cleaned intestine with all the spice powders along with a cup of water.
  • Pressure cooks it until done (around 6-7 whistles)
  • Open the lid only after completely cools down.
  • Heat a pan with coconut oil.
  • Splutter fennel seeds and add curry leaves.
  • Add shallots and saute until transparent.
  • Add crushed garlic, green chilly and ginger.
  • Saute for a minut until raw smell goes off.
  • Then add the cooked intestine; mix well.
  • Heat in a high flame until all the water content in it gets absorbed and slow cook for another few minutes until it reaches a thick dry roast consistency.
  • Serve hot with the choice of your roti.
