Tandoori Chicken Biriyani
Tandoori chicken biriyani is a unique biriyani preparation using grilled chicken pieces. The well baked chicken pieces are steamed again with rice and onion masala and results an awesome tasty Biriyani. It is one of the perfect recipe for a fancy dinner party.Try it once and you must start loving it forever!
Ingredients for marinating chicken:
- Chicken-1 kg
- Turmeric powder- ½ tsp
- Kashmiri chilly powder- 1 tbsp
- Garam masala powder- 1 tsp
- Ginger garlic paste- 1 1/2 tbsp
- Lemon juice-1 tbsp
- Thick curd- 2 tbsp
- Salt-to taste
- Ghee/ oil- 2 bsp
- Marinate the chicken pieces with ingredients under marination except oil.
- Let it rest for overnight or at least 5 hours.
- Add oil on top and grill it in the oven for about 30 minutes until done and brown in color.
- Meanwhile prepare the masala.
- Oil/ ghee- 2 tbsp
- Onion-3 nos
- Ginger garlic paste-1 tbsp
- Green chilly – 2 nos
- Tomato-2 small
- Turmeric powder- ½ tsp
- Garam masala powder-1 tsp
- Pepper powder-1 tsp
- Chilly powder-1 tsp
- Coriander leaves chopped- 2 tbsp
- Mint leaves chopped-2 tbsp
- Salt-to taste
- Heat oil in a pan; saute onions until transparent.
- Add ginger garlic paste and green chilly.
- Sauté until raw smell goes off.
- Add all the powders one by one and mix well after each addition.
- Add tomato pieces and sauté until mashed well.
- Add coriander leaves and mint leaves.
- Add the prepared grilled chicken pieces in to it. Keep aside.
- Basmati Rice-2 cups
- Cardamom-5 nos
- Clove-5 nos
- Cinnamon-1 small inch stick
- Bay leaf-1
- Cumin seeds- ½ tsp
- Salt-to taste.
Preparation:
- Wash and soak basmati rice in water for 30 minutes.
- Boil water in a large pan by adding salt,cardamom, cloves, cinnamon, bay leaf and cumin seeds.
- When it boils add drained rice and cook it until ¾ th cooked.
- Drain the excess water and keep the rice aside.
- Fried onion-1 large
- Fried cashews- few
- Fried raisins-few
- Coriander leaves chopped-1 tbsp
- Mint leaves chopped- 1tbsp
- Ghee-2 tbsp
- Food color a pinch
- Rose water-1tsp
- Lemon juice-1tsp
- In a large dum pan add a tablespoon of ghee.
- Spread the prepared chicken masala on top.
- Above that spread cooked rice evenly.
- Spread the garnishing ingredients on top.
- Cover the lid tightly; so that no more steams to be escape.
- Cook on simmer mode for 20 minutes.
- Open the lid after 10 minutes.
- Serve hot with raitha and pickle!
