Soya Chunks Manjurian

 Soya chunks manjurian is a delicious vegetable gravy dish made with nutritious soya chunks. Soy is an excellent source of protein and has lot of health benefits too. Tasty soya chunks manjurian can be served along with steamed rice, chapathi or any other flat breads. It is an excellent starter for a vegetarian party.  Here is the simple and easy recipe preparation.
Ingredients:
  1. Soya- 1 cup
  2. Chilly powder-1 tsp
  3. Ginger garlic paste- 1 tbsp
  4. Soya sauce-1 tsp
  5. Corn flour-1 tbsp
  6. All purpose flour / maida- 1tbsp
  7. Salt- to taste
  8. Vinegar-1 tsp
  9. Oil-for frying
Other Ingredients:
  1. Sugar- a pinch
  2. Ginger chopped-1 tbsp
  3. Garlic chopped- 1 tbsp
  4. Green chilly chopped- 1tsp
  5. Onion-1 big
  6. Kashmiri chilly powder-1 tbsp (optional)
  7. Soya sauce- 1 tbsp
  8. Tomato paste-2 tbsp
  9. Chilly sauce-1 tsp
  10. Salt- a pinch
  11. Bell pepper / capsicum – 1 small
  12. Spring onion chopped- 2 tbsp
  13. Coriander leaves chopped-1 tbsp
  14. Corn flour- 1 tbsp
Preparation:
  • Pressure cooks soya chunks by adding little salt and enough water to cover it for 2 whistles on high flame.
  • Open the lid after pressure releases by itself.
  • After cools down; Squeeze each soya chunks to remove the water absorbed by it. (After cooking it doubles its size by absorbing water).
  • Now marinate the squeezed soya chunks with ingredients under marination except oil.
  • Deep fry it in oil until the coating masala gets cooked (for few minutes only).
  • Heat 1 tbsp of oil in another pan, add a pinch of sugar in it.
  • When it browned in color, add ginger, garlic and green chilly.
  • Saute until golden in color and nice aroma comes out.
  • Add thinly cubed onion pieces and sauté for a minute.
  • Add chilly powder and capsicum.
  • Add all the sauces and pinch of salt.
  • Add fried soya chunks and mix well.
  • Mix corn flour with ¼ cup of water and add it in to the pan.
  • Cook for another two minutes and switch off the flame.
  • Sprinkle spring onion and coriander leaves on top.
  • Serve hot with the choice of your Roti !!
