Malai Chicken Curry

Malai chicken curry is a creamy rich curry with the goodness of coconut milk and cashews. It goes well with all type of rice, parathas, roti and naan. Every one must try this delicious curry and serve it for your loved ones.
  1. Chicken- 3/4 kg
  2. Kashmiri chilly powder-1 tbsp
  3. Garam masala powder- 1/2 tsp
  4. Ginger garlic paste-1tbsp
  5. Lemon juice-1tbsp
  6. Salt-to taste
  7. Ol-for frying
  8. Other ingredients:
  9. Onion-2 big
  10. Tomato-1 big
  11. Ginger garlic crushed-1 tbsp
  12. Green chilly-2 nos
  13. Turmeric powder- 1/2 tsp
  14. Chilly powder-1 tsp
  15. Coriander powder-1 1/2  tbsp
  16. Garam masala powder- 3/4 tsp
  17. Salt-to taste
  18. Coconut milk- 2 1/ 2 cup
  19. Cashew nuts- 10 nos
  20. Kasoori methi-1 tbsp
  21. Coriander leaves chopped-1tbsp

  • Marinate the chicken pieces with ingredients under marination for 1 hour.
  • Shallow fry it in hot oil for medium-low flame until just golden in color and cooked (don't over fry).
  • Take it out from the oil and keep aside in a plate.
  • In the remaining oil (remove excess amount of oil) saute onions thinly chopped until golden in color.
  • Add crushed ginger, garlic and green chilly.
  • Saute until raw smell goes off.
  • Add all the powders one by one in low flame by mixing well in each addition.
  • Blend chopped tomato pieces in to a smooth paste.
  • Add it in to the curry and saute for 5 minutes.
  • Add coconut milk and fried chicken pieces in to the curry.
  • Blend cashew in to a fine paste by adding little water,
  • Add it in to the curry (add boiling water , if need more curry).
  • Cook until curry thickens.
  • Add kasoori methi dried (by crushed with hands) and coriander leaves.
  • Switch off the flame and serve hot with your choice of roti!!!
