Coffee Cake Pudding

The moist coffee cake with the pudding on top brings out a heavenly dessert. Here simple coffee flavored cake is topped with pudding mix and sets together. The aroma of coffee, chocolate and caramel together forms a wonderful recipe.

Ingredients For The Coffee Cake:
  1. Eggs-3 nos
  2. Flour- 1 ¼ cup
  3. Baking Powder- ¾ tsp
  4. Powdered Sugar- 1 cup
  5. Vanilla essence- ½ tsp
  6. Milk – ¼ cup
  7. Oil- ¼ cup
  8. Coffee powder- 1 tsp
  • Sieve flour, coffee powder and baking powder together in a bowl. Keep aside.
  • Beat eggs and powdered sugar until fluffy and creamy.
  • Add Vanilla essence, Milk and oil by mixing well in each addition.
  • Fold it with flour mix by three additions until fully incorporated.
  • Pour in to greased (with butter and dust with flour) baking tray and bake it in the pre-heated oven in 180 degree  for 30-35 minutes until a skewer is inserted and check whether it comes out clean.
  • Allow the cake to cools down completely.
Other Ingredients:

  1. Caramel pudding powder- 2 packet
  2. Milk-1 cup
  3. Thick cream- 150 ml
  4. Sweetened condensed milk-  ½ tin + ¼ tin
  5. Strong Coffee- 1 cup
  6. Chocolate syrup- 2tbsp + decorating
  • Cut the prepared cake in to two pieces.
  • Make a strong coffee by boiling a cup of water with 1 teaspoon of coffee powder. Keep aside.
  • Mix milk with two packets of caramel pudding mix and ¼ cup of condensed milk in a pan.
  • Boil it in low flame for 3-5 minutes until thickens.
  • Switch off the flame and keep aside.
  • Quickly in another bowl mix fresh cream with chocolate syrup and ½ tin of condensed milk . Keep aside
  • In a pudding tray; add the caramel syrup of two packets.
  • Above that put a piece of cake.
  • Make some deep pits on the cake with a fork and pour ½ cup of prepared  strong coffee over the cake evenly.
  • Above that pour the prepared caramel pudding mix.
  • Put another piece of cake on top and spread the remaining coffee on top of the cake.
  • Lastly pour the fresh cream mix evenly on top.
  • Decorate on top with chocolate syrup.
  • Refrigerate for at least 5 hours to set.
  • Cut in to pieces and enjoy the taste !!
  • Note: Take the same baking tray for making cake and assembling pudding.
