Baby Corn Masala
Baby corns are the cute miniature vegetable that often star in the dine table. It has a sweet and succulent taste. It is very healthy as well as kids favorite. We can make many dishes with baby corn like salads, manjurian, corn chilli, etc. Here is a baby corn recipe with a Kerala touch. This baby
corn curry is a tangy and spicy curry that can be served along with steamed
rice, chapathi's or any flat roti’s.
Ingredients:- Chopped baby corns- 1 1/2 cup
- Oil- 2 tbsp
- Onion chopped-1 large
- Tomato puree- 1 cup
- Green chilly slit-2 nos
- Turmeric powder- ½ tsp
- Kashmiri chilly powder- 1 tsp
- Coriander powder- ½ tsp
- Garam masala powder- ½ tsp
- Salt- to taste
- Thick coconut milk- ¼ cup
- Heat oil in a pan; sauté onions until transparent.
- Add chopped baby corns, green chilly and all the spice powders.
- Add tomato puree and salt along with a cup of water.
- Cook for 20 minutes until baby corns get cooked well.
- Add coconut milk and cook for another few minutes until gravy starts thickening.

- Switch off the flame and serve hot with the choice of your roti.
