Baby Corn Masala

Baby corns are the cute miniature vegetable that often star in the dine table. It has a sweet and succulent taste. It is very healthy as well as kids favorite. We can make many dishes with baby corn like salads, manjurian,  corn chilli, etc. Here is a baby corn recipe with a Kerala touch. This baby corn curry is a tangy and spicy curry that can be served along with steamed rice, chapathi's or any flat roti’s.
Ingredients:
  1. Chopped baby corns- 1 1/2  cup
  2. Oil- 2 tbsp
  3. Onion chopped-1 large
  4. Tomato puree- 1 cup
  5. Green chilly slit-2 nos
  6. Turmeric powder- ½ tsp
  7. Kashmiri chilly powder- 1 tsp
  8. Coriander powder- ½ tsp
  9. Garam masala powder- ½ tsp
  10. Salt- to taste
  11. Thick coconut milk- ¼ cup
Preparation:
  • Heat oil in a pan; sauté onions until transparent.
  • Add chopped baby corns, green chilly and all the spice powders.
  • Add tomato puree and salt along with a cup of water.
  • Cook for 20 minutes until baby corns get cooked well.
  • Add coconut milk and cook for another few minutes until gravy starts thickening.

  • Switch off the flame and serve hot with the choice of your roti.
