Almond / Badam Gheer
Badam/ almond gheer is a creamy, rich Indian dessert. Almonds
have innumerable health benefits. The richness of almond with milk and
condensed milk gives a delicious treat. Do try and serve this wonderful protein
rich glass to your kids.
- Chopped almonds- ½ cup
- Cashew nuts-1 tbsp
- Milk-4 cups
- Cardamom powder- ¼ tsp
- Saffron-few strands
- Sugar- ½ cup (or sweetened condensed milk-to taste)
- Soak saffron strands crushed in little warm water.
- Soak almonds and cashew nuts in water separately for 2 hours.
- Peel the skin of almond.
- Blend cashews and peeled almonds in to a smooth paste by adding enough milk.
- In heavy bottomed pan; boil milk for few minutes (10 minuts). Stir well.
- Add sugar and mix well.
- Add the almond paste; and stir well continuously to avoid burning (even a small burn will destroy the taste of gheer).
- Finally it starts thickening (cook about 25minutes in low flame).
- Add saffron soaked milk and cardamom powder.
- Switch off the flame ater one minutes.
- Let it cools down completely and serve!!
