Almond / Badam Gheer

Badam/ almond gheer is a creamy, rich Indian dessert. Almonds have innumerable health benefits. The richness of almond with milk and condensed milk gives a delicious treat. Do try and serve this wonderful protein rich glass to your kids.
  1. Chopped almonds- ½  cup
  2. Cashew nuts-1 tbsp
  3. Milk-4 cups
  4. Cardamom powder- ¼ tsp
  5. Saffron-few strands
  6. Sugar- ½ cup (or sweetened condensed milk-to taste)
  • Soak saffron strands crushed in little warm water.
  • Soak almonds and cashew nuts in water separately for 2 hours.
  • Peel the skin of almond.
  • Blend cashews and peeled almonds in to a smooth paste by adding enough milk.
  • In heavy bottomed pan; boil milk for few minutes (10 minuts). Stir well.
  • Add sugar and mix well.
  • Add the almond paste; and stir well continuously to avoid burning (even a small burn will destroy the taste of gheer).
  • Finally it starts thickening (cook about 25minutes in low flame).
  • Add saffron soaked milk and cardamom powder.
  • Switch off the flame ater one minutes.
  • Let it cools down completely and serve!!
