Weaving Basket Chocolate Fruit Cake

Weaving basket fruit cake is an airy lightly sweetened cake, with rich fruits topping is perfect attraction for a party or any special occasion. Top the cake with the choice of your favorite fruits. peel the skin of oranges carefully before topping. 
Ingredients for the Cake:
  1. Eggs- 4 large
  2. Flour-2cups
  3. Cocoa powder- ¾ cup
  4. Expresso powder / Coffee powder- 1tsp
  5. Corn Flour-2tbsp
  6. Sugar- 1 ¼ cup
  7. Baking powder-2 tsp
  8. Salt- ½ tsp
  9. Vegetable oil- ¾ cup
  10. Vanilla extract-1tsp
  11. Milk-1 ¼ cup
Ingredients for frosting and assembling:
  1. Fresh fruits
  2. Sugar syrup-1cup
  3. Corn flour- ¼ tsp
  4. Heavy Cream- 2 cups
  5. Powdered sugar- ¾ cup
  6. Cocoa powder-1tbsp
  7. Melted chocolate- ¼ cup
  8. vanilla extract- 4 drops

  • Pre-heat the oven to 300 F. Grease two round 9 inch round pans.
  • Whisk all the dry ingredients together in a large bowl (flour/ cocoa, baking powder, espresso powder, corn flour, sugar and salt).
  • Add the eggs, milk, oil and vanilla extract gradually by beating until smooth and incorporated fully (hand mixer is enough).
  • Pour the batter in to prepared pans and bake for about 40 minutes or until a skewer is inserted and whether it comes out clean.
  • Allow to cool completely before frosting.
  • Make the sugar syrup by boiling ½ cup of sugar and ½ cup of water for 5-6 minutes. Add ½ tsp of lemon juice and allow to cool completely.
  • Make some dots on the cakes with a fork and apply sugar syrup (keep ¼ cup of sugar syrup for glazing fruits) evenly over the cakes.
  • For frosting, in a large saucepan; add heavy cream, sugar, melted chocolate and vanilla extract.
  • Beat at high speed until combined and fluffy.
  • Apply the frosting in between the cakes and all over it by weaving method.
  • Boil the remaining sugar syrup and add ¼ tsp of corn flour (by diluting with little water) and boil for 2 minutes. (in order to get a glazing texture)
  • Allow to cools down completely.
  • Dip each piece of fruit in the syrup before putting on the cake. (or brush lightly the fruits with syrup after assembling on the cake).
  • Refrigerate the cake for 1 hour to set.

Note: I apply frosted white whip cream (without adding cocoa and chocolate melted) layer in between the cakes. You can replace it with chocolate cream.
