Travancore Chicken Roast

 Kerala chicken roast recipes are small chicken pieces  cooked in a thick gravy.We can make chicken roast in different styles like malabar style, chettinad style, travancore style, etc. In Travancore chicken roast, the chicken pieces are well coated with spices and includes some onion gravy also. Here is the simple preparation.

Ingredients For Marinating:
  1. Chicken- 7 medium pieces
  2. Kashmiri chilly powder-2tsp
  3. Chilly powder-1tsp
  4. Pepper powder-1/2 tsp
  5. Lemon juice-1tsp
  6. Ginger paste-1 1/4 tsp
  7. Garlic paste-1 tsp
  8. Fennel powder- 1/2 tsp
  9. Maida / flour-2tbsp
  10. Corn flour-1tbsp
  11. Small onion/ shallots paste- of 3nos
  12. Curry leaves paste-1tsp
  13. Oil-for frying
Other ingredients:
  1. Dry red chilly- 1 large
  2. Ginger chopped-1tsp
  3. Garlic chopped -1tsp
  4. Onion-1large
  5. Curry leaves-2 spring
  6. Curd-1 tbsp
  7. Kashmiri chilly powder- 1/2 tsp
  8. Garam masala- 1/4 tsp
  9. Tomato ketchup- 1tbsp
  10. Salt- to taste
  • Wash and clean the chicken pieces well.
  • Make some deep slits on it with a knife and dry the chicken pieces with a towel.
  • Marinate it with the ingredients under marination.
  • Let it rest for 30 minutes for the flavors to immerse.
  • Fry it in hot oil at medium-low flame until both sides are cooked and browned (don't fry too much ).
  • In the remaining oil add dry red chilly, chopped ginger, garlic and curry leaves.
  • Saute until golden in color.
  • Add onion and saute until transparent.
  • Add chilly powder garam masala and salt.
  • Add beaten curd and toamto ketchup.
  • add fried chicken pieces and mix well for a minute.
  • Switch off the flame and serve hot!!!
