Potato Coconut Milk Curry

Potato in coconut milk curry is a mildly spiced thick curry that goes well with idiyappam, poori, appam and paratha. It is one of the ultimate comfort food for all. Here is the simple recipe of rich nourishing potato curry.

  1. Potato-2 medium
  2. Onion-1
  3. Tomato-1
  4. Garlic crushed-1tbsp
  5. Shallots / small onion crushed-1tbsp
  6. Green chilly-1
  7. Turmeric powder- ½ tsp
  8. Chilly powder- ½ tsp
  9. Garam masala- a pinch
  10. Pepper powder- ½ tsp
  11. Oil-1tbsp
  12. Mustard seeds-1tsp
  13. Cumin seeds- a pinch
  14. Curry leaves-1 spring
  15. Dry red chilly-1
  16. Thick coconut milk-1cup
  • Cook potato pieces with turmeric powder, salt, pepper powder and  ¼ cup of water in a pressure cooker for 2 whistles on high-medium flame.
  • Heat oil in a pan, splutter mustard seeds.
  • Add cumin seeds, dry red chilly, curry leaves and shallots.
  • Saute until shallots are golden in color.
  • Add crushed garlic and sauté for a minute.
  •  Add thinly chopped onions and sauté until transparent.
  • Add all the remaining powders one by one after mixing well in each addition.
  • Add chopped tomato pieces and sauté until mashed well.
  • Add cooked potatoes along with its stock water.
  • Add thick coconut milk and cook for another 3-5 minutes until the curry thickens.
  • Serve hot with the choice of your breakfast.
