Pani Puri / Golgappa


Panipuri / Golgappa, is a popular street food in North India. The crispy puris filled with potato masala and pani is really awesome and everyone loves to bite it once more. Chaat masala gives the authentic and flavorful taste to pani puri. The sweet, spicy and tangy pani is the main attractive of panipuri. Making homemade panipuri is simple easy and let’s start….

Ingredients For Making Puri:
  1. Semolina/ rava- ¼ cup
  2. All purpose flour/ maida- ½ tbsp
  3. Warm water-to makes smooth dough (almost 3 tbsp)
  4. Salt-little
Preparation:
  • Mix semolina, flour and salt.
  • Add warm water little by little and and knead well for 6-7 minutes until a smooth and stiff dough is formed.
  • Let it rest for 10 minutes.
  • In a smooth surface roll it in to a thin big circle as possible.
  • Cut out small circles from these by using a bottle cap or by using the sharp edge of a steel glass.
  • Deep fry it in hot oil in a low flame until both sides are nice golden in color and puffed fully (at the time of adding puri in to oil, the oil must be hot and the puri should immersed fully in the oil; so that it can puffed up and then reduce the flame to low)

Ingredients For Making Pani:
  1. Mint leaves chopped-2tbsp
  2. Coriander leaves chopped-2tbsp
  3. Green chilly-1 small
  4. Ginger-1 small inch piece
  5. Jaggery grated-2tsp
  6. Tamarind pulp-2tsp
  7. Pepper powder-a pinch
  8. Cumin powder-a pinch
  9. Coriander powder-a  pinch
  10. Chaat masala- ½ tsp
  11. Salt- to taste
  12. Water-1cup
Preparation:
  • Add all the ingredients for Pani In a blender except water.
  • Add just enough water from 1cup to make it in to a fine thick puree (blend well).
  • Mix it with remaining water and set aside.

Other Ingredients:
  1. Boiled mashed potato- ¼ cup
  2. Cooked channa- 3tbsp
  3. Lemon juice-1tsp
  4. Chaat masala- a pinch
  5. Coriander leaves chopped-1tbsp
  6. Boondi-few (optional)
Assembling and Serving of Pani Puri:
  • Mix mashed potato, chana dal, lemon juice, coriander leaves ,a pinch of salt and chaat masala in a bowl.
  • Sprinkle the boondi on top of the pani.
  • Put all these plates nearby for assembling (puri plate, pani plate, potato masala)
  • Tha puri may be strong on one side and soft on other side. Make an opening on the soft side and fill it with potato masala to its half level and fill it with pani (pour pani on top of it until it completely filled). Or dip the potato filled puri in pani and directly put it in to your mouth!!!!
  • Note: You can also add chopped onions, chick peas and sev in to the stuffing along with potato masala for an extra crunching.
