Mutton Rogan Josh

 Mutton Rogan Josh is one of the spicy and delicious curries from Kashmir. In this gravy flavors and aroma of spices are really immersed.

  1. Mutton- ½ kg
  2. Oil-3tbsp
  3. Cardamom-3 nos
  4. Cinnamon-1 small inch piece
  5. Cloves-5 nos
  6. Pepper corns- 5
  7. Bay leaf-1
  8. Kashmiri red chilly powder-1tbsp
  9. Fennel seed powder-1tsp
  10. Dry ginger powder-1tsp
  11. Salt-to taste
  12. Hing / asafoetida- a pinch
  13. Yogurt- ¾ cup

  • Heat oil in a heavy bottomed pan.
  • Roast cinnamon, cardamom, clove, hing, bay leaf and pepper corns until fragrant.
  • Add mutton pieces and cook for 5-6 minutes until mutton pieces get dark in color.
  • Add kashmiri chilly powder, coriander powder, fennel powder, ginger powder and salt; mi well.
  • Add beaten yogurt in to it and mix well.
  • Add 2 cups of boiling water in to it and cook covered until the meat gets tendered and cooked nicely.
  • Switch off the flame when the gravy thickens and serve hot!!!
