Mutton Rogan Josh
Mutton Rogan Josh is one of the spicy and delicious curries
from Kashmir. In this gravy flavors and aroma of spices are really immersed.
Ingredients:
- Mutton- ½ kg
- Oil-3tbsp
- Cardamom-3 nos
- Cinnamon-1 small inch piece
- Cloves-5 nos
- Pepper corns- 5
- Bay leaf-1
- Kashmiri red chilly powder-1tbsp
- Fennel seed powder-1tsp
- Dry ginger powder-1tsp
- Salt-to taste
- Hing / asafoetida- a pinch
- Yogurt- ¾ cup
Preparation:
- Heat oil in a heavy bottomed pan.
- Roast cinnamon, cardamom, clove, hing, bay leaf and pepper corns until fragrant.
- Add mutton pieces and cook for 5-6 minutes until mutton pieces get dark in color.
- Add kashmiri chilly powder, coriander powder, fennel powder, ginger powder and salt; mi well.
- Add beaten yogurt in to it and mix well.
- Add 2 cups of boiling water in to it and cook covered until the meat gets tendered and cooked nicely.
- Switch off the flame when the gravy thickens and serve hot!!!
