Lemon Rice

Lemon rice is simply seasoned rice pulao with few ingredients. Everyone loves its flavor and quick easy to prepare.
  1. Basmati rice- 1 cup
  2. Oil-1tbsp
  3. Mustard seeds-1tsp
  4. Urad dal-1tsp
  5. Curry leaves-2 spring
  6. Pea nuts- few
  7. Cashew nut-few
  8. Dry red chilly-1
  9. Lemon juice- 2 tbsp
  10. Yellow food colour- a pinch
  11. Turmeric powder- ¼ tsp
  12. Asafetida/ hing- a pinch
  13. Salt- to taste
  • Wash and soak basmati rice in water for 30 minutes.
  • Drain it and cook it in enough  more boiled water and salt.
  • Cook until done and drain it. Keep aside.
  • Heat oil in a pan; splutter mustard seeds.
  • Add urad dal, curry leaves and dry red chilly.
  • Add pea nuts and cahew. Sauté until they are golden in color.
  • Add turmeric powder, hing, lemon juice and yellow food color.
  • Quickly add cooked rice and give nice mix.
  • Cook for 2-3 minutes until all the rice gets mixed with seasoning.
  • Serve hot with some side dip or lemon pickle.
