Lemon rice is simply seasoned rice pulao with few
ingredients along with lemon juice. Everyone loves its flavor and color. Try this unique preparation at your busy days and just need a pickle or raitha in side.

- Basmati rice cooked- 3 cups
- Oil-11/2 tbsp
- Mustard seeds-1tsp
- Urad dal-1tsp
- Chana dalt-1 tsp
- Curry leaves-2 spring
- Pea nuts- few
- Asafoetida-a small piece (or a pinch if powder)(hing / kayam)
- Dry red chilly-2
- Lemon juice- 1 1/2 tbsp
- Turmeric powder- 1/2 tsp
- Salt- to taste
Preaparation:
- Heat oil in a pan; splutter mustard seeds.
- Add urad dal, chana dal and roasted pea nut; mix well.
- Add curry leaves, dry red chilly and asafoetida.
- Add turmeric powder; mix and add cooked basmati rice.
- Sprinkle lemon juice and salt.
- Give a nice until well combined.Cook for two minutes and turn off heat.
- Serve hot with some side dip or lemon pickle.
