Coconut Cake

 The classic coconut cake is very simple and elegant. It is a perfect bite with a cup of tea.

 Ingredients:
  1. Desiccated coconut- 1 cup
  2. Milk-1 cup
  3. Eggs-3
  4. Sugar-1 cup
  5. Flour- 1 ½ cup
  6. Butter- 125gm
  7. Baking powder- 1 ½ tsp
  8. Vanilla extract- 1 tsp
Preparation:
  • Sieve flour and baking powder together twice and keep it nearby.
  • Preheat the oven in to 180 degree.
  • Soak the desiccated coconut in milk.
  • Beat butter and powdered sugar in a bowl until creamy.
  • Add eggs one by one by beating well.
  • Add vanilla extract.
  • Now fold the batter with flour and coconut-milk mixture alternatively by three additions each. End up the folding with flour.
  • Bake it for 40-45 minutes until a skewer is inserted and check whether it comes out clean.
  • Remold after completely cools down.
  • Cut in to pieces and enjoy the taste!!!
