Chilli Chicken Recipe - Indo-Chinese Style


Chilli chicken is one of the most popular Indo-Chinese chicken preparation. Everyone loves the boneless juicy chicken in sweet and savory gravy. It is one of the best starter for a party menu.
 Ingredients:
  1. Chicken boneless- ½ kg
  2. Soya sauce-1tsp
  3. ginger garlic paste-2tsp
  4. Pepper powder- ½ tsp
  5. All purpose flour / maida- 2tbsp
  6. Corn flour- 1tbsp
  7. Kashmiri chilly powder- ½ tsp
  8. Vinegar- 2 tsp
  9. Salt-to taste
  10. Oil-for deep frying
Other ingredients:
  1. Sugar-a pinch
  2. Onion-2
  3. Capsicum / bell pepper- 1 small
  4. Garlic chopped thinly-1tsp
  5. Ginger chopped thinly-1tsp
  6. Green chilly thinly chopped-1 tsp
  7. Kashmiri chilly powder- 1tsp
  8. Salt-to taste
  9. Tomato sauce-2 tbsp
  10. Red chilly sauce-1tbsp
  11. Soya sauce- 1tbsp
  12. Corn flour-1tsp
  13. Water- ¼ cup
  14. Spring onion-to garnish
Preparation:
  • Marinate the small chicken cube pieces with ingredients under marination for 30 minutes.
  • Deep fry it until cooked nicely (don’t overcook)
  • Keep it aside.
  • In the remaining oil (remove the excess amount) add a pinch of sugar.
  • It caramelizes; quickly add ginger, garlic and green chilly.
  • Sauté until golden in color.
  • Add cubed onions and sauté for a minute.
  • Add chilly powder and pinch of salt; mix well.
  • Combine all the sauce and add in to the pan.
  • Add fried chicken pieces and capsicum.
  • Add corn flour by diluting it with ¼ cup of  water.
  • Cook for another 2 minutes until gravy thickens.
  • Switch off the flame and garnish with chopped spring onions.
Note:
  • Deep frying absorbs less oil than shallow frying; hence it is always better.
  • Fry the chicken pieces until just golden in color at low-medium flame. Over frying makes the chicken pieces hard. 
  • Kashmiri chilly powder is added to get a restaurant style dark red color. You can omit it and add a pinch of red food color if desired.
